Divinely Creamy Cauliflower & Cannellini Bean Soup
This is not your grandmother’s cauliflower soup. It’s divinely creamy and packed with the hidden protein power of white cannellini beans and cashew cream all in one bowl. It’s so easy to make a big batch and freeze for later, so why not try it today?
Ingredients
1 large head of cauliflower, cut into medium-size chunks
1 medium onion, diced
3-4 cloves of garlic, minced
1 lemon, zest and juice
1-2 cups Parmesan cheese, grated (optional)
2 15-oz cans of cooked white cannellini beans, drained and rinsed
1 Tbsp olive oil
2 bay leaves
4 cups vegetable broth
1 cup water
5 Tbsps nutritional yeast (optional)
Sea salt and freshly-ground pepper to taste
4 Tablespoons of cashew cream or thick Greek yogurt
Instructions

Cut broccoli into medium chunks, medium dice the onion, mince the garlic cloves, zest and juice 2 lemons, grate the Parmesan cheese and drain and rinse the beans.

In a large stock pot or dutch oven, add 1 tablespoon of olive oil over medium heat then sauté the onions and when soft and translucent, stir in the garlic for a few minutes. Next, add the vegetable broth and water, bay leaves, cauliflower and white beans. If desired, stir in the nutritional yeast. Season with salt and pepper.

Bring it to a boil then turn down the heat to a solid simmer, cover and cook for 15-20 minutes until the florets are soft and tender.

Once off the heat, remove the bay leaves and ladle the soup into a high-speed blender. You will have enough to make two batches. Add 2 healthy tablespoons of cashew cream and half the lemon zest and juice to each batch and blend on high for 2-3 minutes until it’s smooth and creamy.

Serve with a generous topping of Parmesan cheese and some sprinkles of crunchy onion bits. Refrigerate some to enjoy over the next 2-3 days and freeze the rest for later!
