Spanish Potato Salad

Classic Russian potato salad is a favorite in Spanish tapas bars known as Ensaladilla Rusa. It’s a really easy Spanish tapa you can make at home, loaded with healthy protein tuna, carrots, potatoes and Spain’s answer to the perfect garlic mayonnaise. It only takes a few minutes to prepare this as a perfect Spanish side dish to a multi-course meal or even Spanish main dish if you are just looking for a light lunch! It’s delicious, it’s very simple, and only requires a few ingredients.

Ingredients

1 lb potatoes, boiled and diced
2 carrots, boiled and diced
1 cup frozen peas
2 hard-boiled eggs, diced
1 can of tuna, flaked
1/4 cup garlic mayonnaise (homemade or store-bought)
1/4 cup fresh basil, chiffonade
mediterranean sea salt, to taste
lemon zest
bread sticks

Instructions

Boil the potatoes and carrots until tender. Once done, dice them into small pieces and set aside.

In a mixing bowl, add the diced potatoes, carrots, frozen peas, diced hard-boiled eggs, and flaked tuna.

Add a pinch of Mediterranean sea salt and a squeeze of lemon zest to the mixing bowl. Mix gently.

Add the garlic mayonnaise to the mixing bowl and mix until all ingredients are well combined.

Add more garlic mayonnaise if needed, until the desired consistency is achieved.

Put the breadsticks on top.

Sprinkle the chiffonade of fresh basil on top of the salad.
