Healthy Green Goddess Dressing
Green Goddess dressing may be the latest “little black dress” of the Jennifer Aniston salad set, but this recipe is one that relies on a healthy mix of healthy ingredients so that you can enjoy it with abandon!
Ingredients
2 tbsp of lemon juice
1 tbsp of extra virgin olive oil
salt and pepper, to taste
1 clove of garlic
grated peel of one lemon
1 heaping tbsp of capers
1 cup of parsley
1 cup of rich creamy Greek yogurt
assorted greens (such as basil, cilantro, chives, or any greens available in your fridge)
freshly ground black pepper
ice water (if needed)
Instructions

In a blender or food processor, combine the following liquid ingredients: 2 tablespoons of lemon juice, 1 tablespoon of extra virgin olive oil, and a pinch of salt and pepper.

Add one clove of garlic, grated peel of one lemon, and one heaping tablespoon of capers to the blender.

Begin packing in the healthy greens, starting with one cup of parsley.

Add one cup of rich creamy Greek yogurt to the blender.

Follow it up with the rest of the greens, such as basil, cilantro, chives, or any greens you have in your fridge.

Sprinkle some freshly ground black pepper over the mixture.

Put the lid on the blender and start processing the ingredients until smooth and well combined.

Check the consistency of the dressing. If it’s too thick, balance it out by adding a little bit of ice water, using a tablespoon or two

Give it one more whirl in the blender until the dressing reaches the desired thickness.
