Luxurious Creamy No-Cream Cashew Sauce

Ingredients
1 1/2 cups raw cashews
3/4 cup boiling water
2 tbsp lemon juice
2 tbsp mild olive oil
1 garlic clove
1/2 tsp sea salt
Instructions

In a bowl, soak the raw cashews in 3/4 cup of boiling water for 20 minutes.

Drain the cashews and transfer them to a blender.

Add the lemon juice, mild olive oil, garlic clove, and sea salt to the blender.

Blend on high speed for 1-2 minutes, or until the mixture becomes smooth and creamy.
