Grilled Eggplant with Amazing Black Garlic Sauce

Today’s recipe transforms ordinary eggplant into extraordinary flavor when it’s paired with a magic ingredient roasted eggplant and black garlic dressing.

Take a humble ingredient like the season’s fresh eggplant, pair it with this amazing black garlic sauce recipe and you’ll serve a platter of goodness that will disappear like magic! Whether you air-fry it or oven-roast it, It’s all about dressing it with a black garlic sauce that brings flavor to a whole new level.

Ingredients

1 eggplant
salt and pepper, to taste
extra virgin olive oil
50 g peeled black garlic cloves
1 1/2 tsp harissa paste
1/4 tsp chili flakes
1/2 tsp dark cocoa powder
1 tsp pomegranate molasses
3 1/2 tbsp mild extra virgin olive oil
juice from 1 lemon
1/2 cup roasted pine nuts

Instructions

Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius) or preheat an air fryer.

Wash and trim the eggplant, then cut it into one-inch wedges.

Line a baking tray with parchment paper and place the eggplant wedges on it. Season with salt and pepper, then drizzle with extra virgin olive oil.

Transfer the tray to the oven or air fryer and roast the eggplant for about 30 minutes, or until softened and browned.

In a food processor, combine the peeled black garlic cloves, harissa paste, chili flakes, cocoa powder, pomegranate molasses, mild extra virgin olive oil, and lemon juice. Process until smooth and creamy.

Once the eggplant is roasted, remove it from the oven or air fryer and transfer it to a serving plate.

Drizzle the black garlic dressing over the roasted eggplant.

Sprinkle the roasted pine nuts over the dish and scatter the tiny basil leaves on top.
