Roasted Beet Hummus, Pretty in Pink
Push the flavor of everyday hummus with this homemade roasted beet hummus and you take it to a whole other level of tasty. The roasted beets bring out the sweet in this oh-so-easy blender appetizer.
Ingredients
1 cup roasted beets
15 oz garbanzo beans
zest of 1 lemon
2 tbsp lemon juice
2-3 garlic cloves
2 tbsp tahini paste
sea salt, to taste
pepper, to taste
2 tbsp extra virgin olive oil
Instructions

In a blender or food processor, combine the roasted beets, garbanzo beans, lemon zest, lemon juice, garlic cloves, tahini paste, sea salt, and pepper.

Blend the ingredients on low to medium speed until they start to come together.

Gradually add the extra virgin olive oil while continuing to blend. If the mixture seems too thick, you can also add a little water to achieve the desired consistency.

Continue blending until the beet hummus is smooth and creamy.

Taste and adjust the seasoning with more salt and pepper if needed.

Transfer the beet hummus to a serving bowl and garnish with a drizzle of extra virgin olive oil and a sprinkle of fresh herbs, if desired.

Serve the beet hummus with your favorite dippers, such as pita bread, crackers, or fresh vegetables.
