Best Ever Butter Beans
Just a handful of ingredients like coriander, olive oil, tomatoes, butter beans and, of course a few Mediterranean flavor staples like lemon, garlic and herbs turn this into an incredibly creamy, flavorful way to serve these super healthy beans in a totally addictive dish.

Rinse the butter beans well and let them drain.
Prepare the garlic by using a kitchen trick to remove the skins in a snap.
Mince up five cloves of garlic and finely grind one tablespoon of fresh coriander seeds.
Zest two lemons until you have about a half a cup.
Mince up about one tablespoon of fresh thyme.
Grate a meaty and flavorful tomato using a box grater, leaving the skin behind.
Add sea salt and pepper to the grated tomato and set it aside.
In a pan over medium heat, add three-quarters of a cup of extra virgin olive oil.
Add the minced garlic, fresh coriander, lemon zest, and thyme to the pan. Cook for about 25 minutes until the garlic is tender.
Add a half a teaspoon of sea salt flakes, a few sprigs of fresh rosemary, and a tablespoon of tomato paste to the pan. Stir it all together and let it cook down for about 20-25 minutes.
Optional: Add Aleppo pepper to the sauce for extra spice, according to your taste.
Gently pour the butter beans into the pan and carefully stir them into the sauce. Cook over medium heat for another 10 minutes to allow the beans to absorb the flavors and become creamy.
Slice a fresh baguette.
Serve the Mediterranean Butter Bean Stew hot or at room temperature. Optionally, nestle bits of fresh tomato in between the beans for added freshness and flavor.
