Protein-packed Healthy Snack: Fried Lentils
Join me in my Spanish kitchen while we make fried lentils. A super crunchy snack packed with protein that’s great to serve with drinks or just to have on hand anytime and like a healthy version of M&M candies kids go crazy for these little bits.

Place the lentils in a large bowl and cover them with water. Let them soak overnight.
Drain off the water from the lentils and spread them out on a cookie sheet to dry for about 15 minutes.
Heat the oil in a pan to a temperature of 375 degrees Fahrenheit.
Gently add half a cup of lentils to the hot oil, covering the pan to avoid splatters.
After about a minute, when most of the steam has disappeared, remove the cover and stir the lentils gently to spread them around in the oil.
Fry the lentils for a total of three minutes, until they float to the top and the oil temperature reaches 375 degrees again.
Use a slotted spoon to remove the crispy lentils from the oil and transfer them to a paper towel-lined baking sheet to drain and cool.
Once the lentils are cool enough to handle and most of the oil is drained off, transfer them to a large mixing bowl.
Add one teaspoon of finely ground sea salt and one teaspoon of spicy paprika to the lentils.
Mix well to evenly coat the lentils with the seasoning.
