Orange Spice Rice Pudding with Saffron

This classic Spanish orange rice pudding recipe with saffron is the best you’ll ever have. Arroz con leche is so easy using a Thermomix, just a few ingredients and a little time. It is bound to become a new favorite dessert.

Ingredients

1/2 cup of Bahia rice
1 cup of milk
100 grams of cream
blood orange juice (as desired)
1/2 cup of sugar
1/4 teaspoon of vanilla extract
1 egg yolk
1 1/2 tablespoons of extra virgin olive oil (arbequina)
saffron (bloomed in hot water)
zest of blood orange
pinch of salt
sugar (for caramelizing)

Instructions

In a Thermomix or similar appliance, add the rice, milk, cream, and desired amount of blood orange juice.

Set the temperature to 90 degrees Celsius and the stirring speed to 1.5. Cook for 30 minutes.

After the cooking time, check the consistency of the rice. It should be creamy with a slight bite.

Add the sugar, vanilla extract, egg yolk, extra virgin olive oil, saffron, blood orange zest, and a pinch of salt.

Mix the ingredients together using the Thermomix for 2 minutes at speed 3.

Taste the rice pudding and adjust the flavors if needed.

Divide the rice pudding into individual servings.

Sprinkle sugar in the middle of each serving.

Use a flame torch to caramelize the sugar on top of each serving.

Allow the rice pudding to cool for at least 10 minutes before serving.
