Tortilla de Potato Chips
A bag of potato chips and 8 eggs make a authentic Spanish TAPA so simple you won’t believe it. It’s a real Tortilla Española but so much easier. I learned this technique from world-famous chef Ferran Adriá and have been grateful ever since. It takes minutes to fix a super healthy lunch for less than $3. What’s not to love about that?
Ingredients
8 eggs
2 cups of potato chips (about 100 grams)
optional: serrano ham, chopped
optional: fried onion bits
Instructions

Crack the eggs into a bowl.

Add the potato chips to the bowl and gently stir to mix them together.

Let it rest for a couple of minutes.

If using, chop the serrano ham into small bits.

If using, add the serrano ham and fried onion bits to the bowl with the eggs and potato chips. Mix well.

Heat a pan with a little olive oil in the bottom.

Pour the egg mixture into the pan and let it cook for a few minutes until the edges start to bubble.

Place a lid on the pan and carefully flip the tortilla over onto the lid.

Slide the tortilla back into the pan and continue cooking until it is firm and cooked through.

Remove the tortilla from the pan and drizzle with a little olive oil.
