Heat vegetable oil in a frying pan to 368°F (185°C).
Carefully slide the eggplant slices into the hot oil, one at a time, to avoid splattering.
Fry the eggplant slices for about 2 minutes, until they turn golden brown and crispy.
Flip the slices and fry for an additional 2 minutes on the other side.
Remove the fried eggplant slices from the oil and drain them on a paper towel-lined plate.
While the slices are still hot, drizzle them with honey in an attractive pattern.
