Authentic Spanish Gazpacho
If you have too many leftover veggies, this power-packed authentic GAZPACHO empties the fridge in a hurry. It’s a classic Spanish Gazpacho, a super healthy, veggie packed cold soup from the south of Spain, chock full of end-of-season tomatoes and cucumbers that only takes a few minutes to prepare as a perfect Spanish side dish to a multi-course meal or even Spanish main dish if you are just looking for a light lunch!

Prepare the vegetables by cutting the bell peppers, cucumber, and onion into smaller pieces for easier blending.
Add the prepared vegetables, assorted tomatoes, padron pepper (if using), garlic, sherry vinegar, salt, and a small piece of bread to a blender.
Pour in most of the water and the extra virgin olive oil.
Blend the mixture until smooth and creamy.
Taste the gazpacho and adjust the seasoning if needed by adding more salt or sherry vinegar.
Chill the gazpacho in the refrigerator for a couple of hours or overnight to allow the flavors to meld.
When ready to serve, pour the chilled gazpacho into bowls.
Garnish with diced red and green bell peppers, fried onions, and a drizzle of olive oil.
