Whole Roasted Spicy Cauliflower

Sometimes cauliflower is a tough veggie to love but this whole roasted cauliflower recipe spiced up with all sorts of Mediterranean flavors turns a typically timid vegetable into a dinnertime show stopper all in less than 30 minutes!

Ingredients

1 1/2 teaspoons sea salt
1 tablespoon mild spice mix
1 teaspoon Harissa paste (optional)
3 tablespoons water
3 tablespoons olive oil
2 tablespoons maple syrup, honey, or agave
1 head of cauliflower
parmesan cheese, for garnish
fresh herbs, for garnish

Instructions

In a bowl, combine sea salt, mild spice mix such as charmoula, harissa paste, water, olive oil, and maple syrup, honey or agave. Mix well to form a marinade. Set it aside to allow the flavors to meld.

Prepare the cauliflower by removing the leaves and trimming the bottom core, ensuring the head remains intact.

Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius). Choose a deep-sided baking tray or pan for baking.

Brush the cauliflower head with a layer of the marinade, starting from the underside of the cauliflower, ensuring to reach every nook and cranny.

Flip the cauliflower over and coat the top side with the remaining marinade, making sure it is well covered.

Place the marinated cauliflower in the prepared baking tray or pan.

For professional-style oven results, fill a separate oven-safe dish with two cups of water and place it in the oven. This will create a steam bake environment. Steam baking reduces cooking time, so bake the cauliflower for 15 to 20 minutes. If you prefer not to steam, bake for an additional 5 to 10 minutes.

To check for doneness, insert a knife or cake tester into the cauliflower to ensure it is tender all the way through.

Once the cauliflower is cooked to perfection, remove it from the oven.

Garnish the roasted cauliflower with Parmesan cheese and fresh herbs like basil for added flavor.
