Roasted Spicy Sweet Potatoes
This creamy, spicy, roasted sweet potato recipe is a Mediterranean diet powerhouse packed with an incredible amount of healthy nutrients. Fiber, vitamin C, calcium, vitamin A, thiamin, beta carotene, manganese… all in a little 140-calorie package. Need I say more?

Brush lightly with olive oil and season with salt, pepper and sumac (optional).
Preheat oven to 400°F/200°C.
Scrub the potatoes and split in half lengthwise.
Mix together cream, syrup, lime juice and zest and seasonings. Set aside for garnish.
Arrange on baking sheet, cut side up. Tightly cover and bake for 15 minutes.
After 15 minutes, remove the potatoes from the oven, discard cover, flip over and return to oven uncovered for 10 minutes more.
When fork-tender, remove and cool slightly. Garnish with sauce and pumpkin seeds or toasted hazelnut seeds.
