Greek-style Shrimp Scampi
This Greek-style shrimp scampi pasta recipe takes the classic flavors of Greece and marries them in a creamy one-pan dinner that’s just as perfect for a fast weeknight dinner as it is for an “easy to put together” Saturday night feast with friends. Heat 2 tbsps of extra virgin olive oil in a low saute pan or brassier and saute the onions until they are soft and translucent, then stir in the garlic and cook for 1-2 minutes.
Stir in the orzo, stirring to coat the pasta and cook for 2-3 minutes until it starts to take on some color.
Add the stock, bring to a gentle boil and cook, uncovered, until pasta is less than al dente (it will finish cooking once he shrimp is added). Stir occasionally to ensure the pasta doesn’t stick to the bottom of the pan.
Stir in the olives, ½ cup of the crumbled feta cheese and 2 tbsps of lemon juice until well-incorporated.
Reduce the heat to medium-low, nestling the shrimp into the pasta and cover, cooking for about 5 minutes more until the shrimp is pink and just cooked through.
Season with salt, pepper and more lemon juice to your taste. Garnish with herbs and the remaining 1/2 cup of the feta cheese.
