Pistachio Citrus Vinaigrette

When you are looking to dress springtime vegetables fresh from the market or the garden, this vinaigrette is the perfect salad partner. The tangy citrus finish with the rich creamy taste of pistachios is a lavish but light way to make everything in your bowl just a little bit brighter! And if you have extra, using it to lightly coat some pasta in place of pesto is an instant dinner winner.

Ingredients

¼ cup pistachios
½ cup packed fresh basil leaves
1 garlic clove
¼ cup white wine vinegar
¼ cup lemon juice
1 Tbsp lemon zest
½ cup extra virgin olive oil
1 Tbsp Dijon mustard

Instructions

Place the pistachios, basil and garlic in a blender or food processor and finely mince into a paste.

Add the remainder of the ingredients and continue blending until well combined. Finish it off with sea salt and freshly ground pepper to your taste.
