#1 Condiment Worldwide? Garlic Mayonnaise

What’s the #1 Condiment Worldwide? Mayonnaise. In Spain? Garlic Mayo. Because Spaniards know adding garlic is a sure fire way to make most favorite dishes even better. In Spain, mayonnaise is known as Alioli, Aioli or Garlic Mayonnaise. No matter what you call it, it is a super easy, very versatile sauce using extra virgin olive oil and garlic from our farm. You can use it everyday on almost everything! If you like garlic, this dish is for you.

Ingredients

2 cloves of garlic, peeled
1/2 cup olive oil
1 egg
salt, to taste
lemon juice, to taste
optional: pimenton, saffron, grated lemon peel, or other desired seasonings

Instructions

Start by preparing the garlic. Slice the garlic cloves in half and remove any green stems.

If you want to take the traditional route, using a mortar and pestle, pound the peeled garlic cloves into a smooth paste. Add a pinch of salt to provide some grit and help with the pounding process.

Slowly pour in the olive oil while continuing to whisk and pound the garlic paste. This process can take around 20-25 minutes to achieve a rich and flavorful mayonnaise without using eggs.

A modern-day option is to use a blender or immersion blender, crack the egg and add it to the blender. Add a pinch of salt and the peeled garlic cloves. Reserve the lemon juice for later.

Blend the egg and garlic together until well mixed. Begin pouring the olive oil in a thin stream while the blender is running. Pour the oil slowly to prevent the mayonnaise from breaking. If the mayonnaise breaks, add a touch of water to restore the emulsion.

Continue adding olive oil in a thin stream until the desired thickness is achieved. The mayonnaise should be thick and saucy.

Taste the mayonnaise and adjust the seasoning as desired. Add more salt, lemon juice, or other seasonings like pimenton, saffron, or grated lemon peel to enhance the flavor.

Store the garlic mayonnaise in the refrigerator and use it as a dip for vegetables or spread it on sandwiches.
