5-Minute Spanish Garlic Shrimp

If you have a few shrimp in the freezer or fresh from the fridge, some garlic and a glug of extra virgin olive oil, get ready for a really rich but healthy Mediterranean treat!

Prepare the shrimp by removing the heads and cutting down the back to peel off the shell, leaving the tail intact.
Slice the garlic cloves into thin slices.
Toast the baguette slices in a toaster until golden brown.
Line a classic Spanish casuela dish with the toasted baguette slices.
Heat a medium-sized pan over medium heat and add the olive oil.
Add the sliced garlic to the pan and cook for 2-3 minutes until they become slightly brown and fragrant. Remove the garlic from the pan and set aside.
Gently place the shrimp in the pan, making sure not to overcrowd them.
Cook for a couple of minutes until they start to turn pink.
Flip the shrimp over and sprinkle with salt and spicy pimenton.
Toss the shrimp to coat them evenly with the spices.
Place the cooked shrimp on top of the baguette slices in the casuela dish.
Pour the garlic-infused olive oil over the shrimp and the baguette slices.
Garnish with fresh parsley for a pop of color.
