Air-Fry Salmon Fillet

This air-fry salmon fillet with roasted potatoes and carrots is a simple winter dinner recipe you can put together is less than 30 minutes. With a crunchy pistachio crust, the salmon is crispy, succulent and flaky. Plus, we’ll pair it with roasted baby potatoes and carrots and a fresh mixed green salad dressed with the same honey mustard vinaigrette to get a whole dinner on the table in less than 30 minutes – start to finish.

Ingredients

4 salmon fillets
2 tbsp spicy mustard
2 tbsp olive oil
2 tbsp honey
1 tbsp lemon juice
sea salt
2 tbsp Panko breadcrumbs
1 tbsp grated parmesan cheese
1 tbsp olive oil
1/4 cup finely chopped pistachios
baby potatoes
carrots
olive oil
garlic powder
sumac
salt and pepper

Instructions

Preheat the air fryer to 375 degrees Fahrenheit.

Cut the baby potatoes and carrots into bite-sized pieces and season with olive oil, garlic powder, sumac, salt, and pepper. Place them in a single layer in the air fryer or on a small oven sheet pan and air-fry for 11 minutes.

In a small bowl, mix together the spicy mustard, olive oil, honey, lemon juice, and sea salt to make the honey mustard glaze.

In another bowl, mix together the Panko breadcrumbs, grated Parmesan cheese, and olive oil until moist.

Place the salmon fillets on a sheet of foil and brush them generously with the glaze.

Sprinkle the breadcrumb mixture over the glaze, followed by the finely chopped pistachios.

Carefully nestle a rack above the veggies and add the salmon. Place the foil around the salmon to create a tray to catch any pan drippings.

Air fry for 11 minutes more or until the salmon is cooked through and the crust is crispy and golden brown.

Serve the salmon with the roasted baby potatoes and carrots and a crisp green salad drizzled with any remaining honey mustard glaze. Enjoy!

    I made the Air Fryer salmon the other night for dinner with pan roasted potatoes and carrots. It was so good! I did not have Parmesan cheese so just used the Panko and olive oil crunchy bits on top – did not notice anything missing at all. This recipe was excellent and will go on our “favourite” recipes list for sure! Thank you for posting this ! I used half the recipe and it was perfect for two of us!
