Air-Fryer Broccoli: So Crispy & Crunchy with Garlic & Parmesan

This totally easy air fryer broccoli recipe is full of garlic parmesan flavor and roasted to perfection in a matter of minutes. Maybe you already know how to make oven roasted broccoli, but I promise this simple and fast Mediterranean recipe will turn this powerhouse healthy veggie into a new flavor favorite!

Ingredients

1 head of broccoli

1 Tbsp garlic powder

1 tsp chile powder

Extra virgin olive oil, to spray

1 cup walnuts, chopped

1 cup Parmesan cheese, grated

1 tsp extra virgin olive oil

4 anchovy filets

1 cup Panko or coarse homemade breadcrumbs

Sea salt and freshly-ground pepper to your taste

Instructions

Cut up broccoli into bite-sized florets. Toss with garlic powder and chile flakes. Lightly spray with olive oil to coat.

Fill an air fryer base with the florets in a single layer. For a medium-sized head, you’ll be preparing two batches. Add 1 tablespoon of water to the air fryer to help the broccoli stay moist while it bakes. Set the air fryer to 400° for 7 minutes, checking on them and tossing once in the baking process.

While the broccoli bakes, chop the walnuts and blend with the breadcrumbs. Set aside.

In a medium-sized sauté pan over medium heat, add 1 teaspoon of olive oil and 4 anchovy filets, stirring 2-3 minutes until the anchovies melt. Then add the walnuts and breadcrumbs, stirring until they develop a nice brown color and toasty flavor.

When the mixture is cool, add the grated parmesan cheese, mixing to blend and set aside until the broccoli is done.

In a serving dish, evenly layer the hot broccoli and topping so that the cheese melts into all the little nooks and crannies. Serve it while it ‘s hot!
