Baked Cod – Mediterranean Style
This incredibly flavorful one pan meal is loaded with all the healthy benefits of a Mediterranean diet dinner recipe. With the light flavors of baked cod and potatoes surrounded by the rich Mediterranean flavors of tomatoes, olives, lemon, garlic, and tasty herbs.
Baked cod is such a classic staple of the Mediterranean diet here in Spain and pairing it with potatoes and garlic is pretty much an every day way to enjoy this healthy fish.

Preheat the oven to 450 degrees.
Pat the potato slices dry and layer them in a baking pan. Season with salt and pepper, and drizzle with olive oil.
Add the garlic cloves to the pan and place it in the oven for 30 minutes.
While the potatoes are baking, prepare the remaining ingredients. Slice and salt the zucchini, and dice the tomatoes. Mince the chives for garnish.
Sprinkle the seasoning on the cod fillets and top each piece with a slice of lemon.
After 30 minutes, remove the pan from the oven. The potatoes should be crispy on the edges and browned.
Lay the cod fillets on top of the potatoes, and add the olives, tomatoes, and zucchini to the pan.
Return the pan to the oven and bake for another 8 to 10 minutes.
Check the internal temperature of the fish, which should be around 145 degrees.
Plate up the baked cod dinner, garnish with minced chives, and serve.
Bonus Tip: To keep dry ingredients from getting soft and stale, add a food-safe moisture absorber packet to the container.
