Bean & Bacon Soup

Prep the vegetables by dicing them into uniform sizes.
In a pressure cooker or instant pot, brown the bacon over medium heat until crispy and browned. This will enhance the flavor of the stew.
Add the sweet pimenton, spicy pimenton, and garlic to the pot.
Stir them around to toast the spices and release their fragrant aroma.
Add the leeks, onion, carrots, celery, and any other desired vegetables to the pot. Stir them together to mix well.
Drizzle a quarter cup of mild olive oil into the pot. This will add a subtle flavor and make the stew healthier.
Add the turnip, parsnips, and bell peppers to the pot. Stir everything together to combine the flavors.
