Bean & Sausage Stew
This super healthy Spanish giant white bean soup warms up everybody on a cold winter day. Learn this easy and affordable recipe for Asturian White Bean Soup, known in Spain as Fabada Asturiana, to feed yourself and your family the same healthy Mediterranean way every day.

In a large pot, combine the soaked white beans, unpeeled garlic cloves, quartered onion, morcilla sausage, mild chorizo sausage, pork bone, thick sliced bacon, and piece of pork fat.
Add a pinch of saffron and a smidge of sweet Spanish pimenton to the pot.
Pour enough mineral water to cover the ingredients in the pot.
Place a lid on the pot and simmer for about 1 hour, making sure the beans are always covered with liquid.
After 1 hour, check the tenderness of the beans. They should be soft and creamy.
Remove the sausages from the pot and slice them into rounds. Set aside.
Increase the heat slightly and cook off some of the broth.
Taste the soup and add salt to your liking.
Return the sliced sausages to the pot and heat through.
Serve the creamy bean soup in bowls, making sure to include bite-sized pieces of sausage in each bowl.
