Beans, Greens & Wild Things

This Mediterranean one-pot dinner recipe brings together protein-rich lima beans, potassium-packed Swiss chard and wild mushrooms, loaded with vitamins, minerals and antioxidants. All in one-pot, all in less than 30 minutes.

Ingredients

2 cups/200 grams mixed mushrooms, cleaned and trimmed
1 medium white onion, medium dice
2 cloves garlic, finely minced
4 cups/700 grams Swiss chard, torn into pieces
1 lemon, juiced
3 tablespoons extra virgin olive oil (divided)
15 oz/400 grams lima beans (butter beans) and its liquid
2-3 tablespoons of parsley, chopped
1-2 tablespoons of fresh thyme leaves
Sea salt and freshly ground pepper to taste

Instructions

Prepare all ingredients.

Add 2 tablespoons of olive oil to pan over medium heat.

Sauté onion until translucent, add garlic and stir to incorporate.

Add lima beans (butter beans) and the liquid from their can or jar and gently stir to incorporate.

Add 1 tablespoons of lemon juice and parsley. Season with salt and pepper and cook for 15 minutes in a gentle simmer.

Carefully fold in the Swiss chard, being careful not to break the beans until fully wilted. Remove from heat and set aside.

In a separate saucepan large enough to hold all the mushrooms, add 1 tablespoon of olive oil to medium heat.

Sauté mushrooms until well-coated and tender. Add a splash of water if needed.

Add 1 tablespoon of fresh thyme leaves or more to your taste.

Season with sea salt and freshly ground pepper.

Plate the mushrooms on top of beans and chard. Squeeze lemon juice over dish and add another sprinkle of parsley just prior to serving.
