Best Roasted Cauliflower Garlic Hummus

Looking for the best roasted cauliflower garlic dip this summer? This low-carb snack is the perfect Mediterranean diet way to add another bloat-busting veggie to your swimsuit season menu!

Ingredients

1 head cauliflower, roasted
1 head garlic, roasted
⅓ cup tahini
1 lemon, zest and juice (3 Tbsps)
1 Tbsp extra virgin olive oil
Sea salt, pinch
Ice water, to thin
Olive oil, salt and pepper for roasting

Instructions

Preheat oven to 375°F|185°C.

Break cauliflower into florets, toss with olive oil, salt and pepper. Transfer to baking sheet.

Slice top from garlic head, exposing clove tips. Fill head with olive oil and tightly wrap with foil. Transfer to baking sheet.

Bake cauliflower and garlic for 20-30 minutes until roasted and soft.

Tranfer cauliflower, garlic paste and all remaining ingredients into food processor and process until smooth and creamy. For a thinner consistency to your liking, add a bit of ice water to make it light and fluffy.

Garnish with green herbs or chives, extra virgin olive oil and serve alongside fresh, crunchy veggie sticks.
