Burnt Basque Cheesecake, Party-Sized
It is so easy to make famous SPANISH BURNT BASQUE cheesecake in perfect party-size cupcakes. The tiny tapas bar, La Viña in northern Spain created this wildly popular Spanish dessert but I just shrunk it down to size. It’s so simple, you’ll wonder why you don’t make cheesecake all the time!

Preheat the oven to 475 degrees Fahrenheit.
Prepare individual serving cups by lightly spraying the inside with non-stick spray and lining each cup with parchment paper, making sure it exceeds the top of the cup.
In a stand mixer, hand mixer, or blender, combine the eggs and blend for 20 seconds at medium speed.
Add the cream cheese to the mixer and blend for 30 seconds at medium speed.
Add the sugar and blend for 1 minute at medium speed.
Pour in the heavy cream, salt, and vanilla extract, and blend for 3 minutes at medium speed until the batter is smooth and well-mixed.
Spray the prepared cups with non-stick spray to prevent sticking.
Fill each cup close to the top with the batter, leaving some room for the cupcakes to puff up while baking.
Place the cups in the preheated oven and bake for approximately 12-14 minutes.
The cupcakes should still be slightly jiggly in the center when done.
Remove the cupcakes from the oven and let them cool.
