Chunky Avocado Hummus
This recipe is going to become one of your healthy go-to’s the next time you have to bring a dish to any part because unlike most guacamole recipes, you can swap out some of those expensive avocados for budget-friendly nutrient-dense chickpeas and you don’t need to tell anybody just how healthy it is.

In a food processor, combine the minced garlic, half of the diced avocado, chickpeas, lemon juice, extra virgin olive oil, and sea salt.
Blend the ingredients until well combined and smooth.
If desired, add a little ice water to the mixture to make it smoother and fluffier.
Transfer the mixture to a large bowl.
Gently fold in the remaining diced avocado, leaving some chunks for added texture.
Sprinkle the diced chives and chopped cilantro over the top of the hummus.
Drizzle a healthy amount of extra virgin olive oil over the hummus for added flavor and garnish.
Serve the avocado hummus with your favorite dippers or as a spread for sandwiches or wraps.
