Classic Greek Pasta Salad

There are so many fabulous summer pasta salad options all across the Mediterranean. It would be hard to pick the best. But everybody has their favorites and I can’t wait to hear which one is yours – as the classics of Italy, Greece and Spain meet head-to-head.

Ingredients

1 lb pasta
1 red bell pepper, diced
1 yellow bell pepper, diced
1 cup cherry tomatoes, halved
1 cup feta cheese, cut into bite-sized pieces
1/2 cup Kalamata olives, halved
1/2 red onion, thinly sliced
1 cucumber, seeded and medium diced
1/4 cup lemon juice
1/4 cup red wine vinegar
3/4 cup extra virgin olive oil
1 tbsp dried oregano (or less if using fresh)
2 tsp spicy or Dijon mustard
1 tbsp roasted garlic paste
sea salt and pepper to taste
dried pistachios (optional)
freshly chopped dill for garnish

Instructions

Cook the pasta according to package instructions and set aside to cool.

In a large bowl, combine the diced red and yellow bell peppers, halved cherry tomatoes, bite-sized feta cheese, halved Kalamata olives, thinly sliced red onion, and medium diced cucumber.

In a separate bowl, whisk together the lemon juice, red wine vinegar, extra virgin olive oil, dried oregano, spicy or Dijon mustard, roasted garlic paste, sea salt, and pepper to make the dressing.

Pour the dressing over the pasta and toss to coat while it’s still warm.
