Classic Mediterranean Farro Salad
This classic Mediterranean farro salad is one of my all-time favorites. And it puts a smile on everyone’s face that tries it! It’s chewy, crunchy, sweet and savory, colorful and packed to the max with healthy nutrient-dense ingredients.

Begin by prepping the ingredients. Chop the red and yellow bell peppers into small pieces.
Remove the seeds from the pomegranates.
Chop the parsley finely.
Cook the ancient grain (ferro) on the stove top.
If possible, pre-soak the grain overnight to speed up the cooking process.
Cook for about 30 minutes until the grain is fluffy and has a slight bite.
In a large bowl, combine the cooked grain, chopped bell peppers, pomegranate seeds, and parsley.
Add in the beans of your choice.
You can use canned beans or cook them from scratch.
Toss the salad gently to mix all the ingredients together.
