Classic Spanish Pasta Salad
There are so many fabulous summer pasta salad options all across the Mediterranean. It would be hard to pick the best. But everybody has their favorites and I can’t wait to hear which one is yours – as the classics of Italy, Greece and Spain meet head-to-head.

In a small bowl, whisk together the olive oil, Sherry vinegar, sea salt, dried tarragon or thyme, and roasted garlic paste or minced cloves to make the marinade.
Add the sliced tomatoes to the marinade and let it rest in the fridge while you assemble the other ingredients.
Roughly chop the hard-boiled eggs and sliver the pickled peppers.
Drain the can of tuna.
Once the tomatoes have marinated for at least 30 minutes, assemble the salad by placing the marinated tomatoes on a plate.
Top with the chopped hard-boiled eggs, slivered pickled peppers, and drained tuna.
Finish with a sprinkle of chopped parsley and capers.
