Classic Spanish White Gazpacho
If you love garlic and almonds, make Spanish white gazpacho and win over your friends and family with this 5-minute recipe. It’s a less well-known gazpacho, but I promise White Gazpacho or Ajo Blanco, is a totally addictive silky smooth chilled soup from the south of Spain. While the name translates to white garlic, it is really a showcase for Marcona almonds. And it’s almond season in Spain, so it’s time to enjoy some almonds at their freshest. It only takes a few minutes to prepare this as a perfect Spanish side dish to a multi-course meal or even Spanish main dish if you are just looking for a light lunch!.

Soak the almonds in water overnight to plump them up.
In a blender, add the almonds and half of the water. Blend until smooth.
Break the soft white bread into chunks and add it to the blender. Blend again until well combined.
Add the garlic to the blender and blend briefly.
Taste the mixture and add salt to your preference. Blend again.
Gradually add the remaining water while blending, until the soup reaches a desired consistency. It should be smooth and creamy.
Slowly pour in the olive oil while blending to incorporate it into the soup.
Transfer the soup to a fine-mesh sieve and strain out any remaining bits. Stir gently to help the process.
Add the sherry vinegar to the strained soup and stir to combine.
Taste the soup and adjust the seasoning if needed, adding more salt if desired.
Refrigerate the soup for at least 2-3 hours, or until well chilled.
Meanwhile, prepare the garnishes. Thinly slice the green apples and carrots. Chop the toasted almonds. Set aside.
When ready to serve, garnish the bottom of each bowl with a layer of sliced green apples and carrots.
Sprinkle some chopped toasted almonds and fried onions over the garnish.
Optionally, add a touch of coconut flakes for a snowy effect.
Carefully pour the chilled soup into each bowl, allowing guests to serve themselves.
Drizzle each serving with a little olive oil.
