Creamy Mushroom and Cashew Pasta Recipe

Celebrate the season with a 15-minute fast creamy pasta dinner mushroom and cashew cream pasta. It only takes a handful of ingredients – your market-best mix of mushrooms, a few shallots, some garlic, a bit of lemon juice and cashew cream or sour cream. So put the water on to boil for the pasta and let’s get started!

MUSHROOMCASHEWPASTA-1

Ingredients

8 oz pasta, whole-grain preferred
2 cups mixed mushrooms
2 shallots or 1 small onion
2 garlic cloves
2 tablespoons extra virgin olive oil
1 tablespoon lemon juice
1/4 cup cashew cream or sour cream
Fresh parsley, chopped (for garnish) Salt and pepper to taste

Instructions

Bring a pot of water to a boil and cook pasta according to package instructions.

While the pasta cooks, trim and clean the mushrooms, and slice them thickly. Peel and mince the shallots or onion. Peel and mince the garlic cloves.

In a large saute pan over medium-high heat, add 2 tbsp of extra virgin olive oil. Start with the delicate mushrooms, tossing and stirring them in the pan until they develop a nice brown color. Remove them to the side.

Refresh the pan with a little bit of water and a touch more olive oil. Add the remaining mushrooms and a pinch of salt, and continue to cook until they become glossy and brown.

Make a little space in the middle of the pan and add the minced garlic and shallots. Let them get tender and fragrant as you gently stir.

Add the lemon juice to the pan and then return the delicate mushrooms to it. Remove the pan from the heat and add 1/4 cup of cashew cream or sour cream. Use enough pasta water to thin the sauce to your desired consistency. Mix it all together until fully incorporated.

When the pasta is done cooking, reserve 1 cup of pasta water and drain the pasta. Add the pasta to the pan with the sauce and toss everything together. Use the reserved pasta water to thin out the sauce to your preference.

Serve the pasta hot, topped with fresh chopped parsley and freshly ground pepper.
