Easy Shrimp & Chickpea Mediterranean Dinner
Join me this week while I prepare an easy shrimp and chickpea salad dinner recipe for you with a side of air-fried garlicky green beans to round things out! Toss the green beans with a spritz of extra virgin olive oil, salt and pepper. Set the air-fryer to 375°F or 190°C and bake for 7 minutes.
In a large glass bowl, combine 4 tablespoons of the juice, all the zest, Dijon mustard, extra virgin olive oil and salt and pepper and whisk until well-incorporated, then fold in the red onion, parsley and the chickpeas. When everything is well-combined, transfer to a serving platter big enough to hold the chickpeas, the shrimp and the beans.
Heat a stovetop griddle on high and lightly coat it with a spray of olive oil.
While the griddle is heating up, gently toss the shrimp with a little extra virgin olive oil, minced garlic and chili seasoning. You can make it as spicy as you like!
Add the shrimp to the griddle, cooking undisturbed on one side for 2-3 minutes, then turning over and searing the other side for a minute or two. The shrimp should be crispy, charred on the outside and still very tender on the inside. Remove them immediately to the side and using the remaining citrus juice, deglaze the pan to get all the best bits and flavor.
Top the beans with the hot shrimp and the pan juices, garnish with a little greenery. Chives, parsley, cilantro or basil. And round out the platter and dinner with the green beans and a whole grain crusty baguette.
