Famous Spanish Tapa “Gilda”
In the 1940’s, Spain went crazy for Hollywood bombshell, Rita Hayward, and created a special pintxo, or tapa, called the GILDA.
This sassy, spicy tapa was created in 1949 following the movie of the same name that created a worldwide sensation, starring Rita Hayworth as an American hottie in Argentina. It’s fun, it’s fast and it’s full of flavor. You won’t believe how easy it is to put together for tapas parties or last minute guests.

Open a can of high-quality anchovies and place them on a plate for easy assembly.
Open a jar of guindia peppers and take out six peppers.
Open a can of large green olives and take out twice as many as the total number of servings needed (12 olives for six servings).
Thread one olive onto the end of each skewer.
Slice the guindia peppers in half and trim off the stem ends.
Cut each half into two pieces.
Thread two pieces of guindia pepper onto each skewer, until all six skewers are filled.
Gently roll or fold an anchovy into thirds and place it on the end of each skewer.
Finish the dish by adding one green olive to the end of each skewer.
