Feta Pistachio Herb Dip

A nutty, rich smear of pistachios, feta cheese and yogurt. It’s makes a perfect dollop of Mediterranean flavor for crackers or little baguette toasts. I’m using lots of basil along with a hint of dill and mint but you’d rather visit a beach in Greece, then load up the herbs with lots more dill and mint and skip the basil.

Ingredients

1 cup dried pistachios
1 cup fresh herbs
1 tablespoon roasted garlic paste or 1 clove fresh garlic
3 tablespoons lemon juice
3 tablespoons extra virgin olive oil
4 ounces feta cheese
½ cup Greek yogurt
Extra virgin olive oil and lemon juice to thin to preferred consistency

Instructions

Add the pistachios and herbs to a food processor and blend until it becomes a crumbly base.

Add the roasted garlic paste or clove of garlic, the lemon juice and extra virgin olive oil and give it another whirl.

Finish by adding the feta cheese and yogurt, blending to your desired consistency with the addition of more lemon juice or extra virgin olive oil or both.
