Glorious Roasted San Marzano Tomatoes
It may not be easy to score a basket of San Marzano tomatoes (unless of course you can grow them!), but when you do – capture the incredible flavor of Italy’s favorite red globe and roast them to use all summer long!
Ingredients
1 big bunch of amazing san marzano tomatoes
olive oil
salt and pepper
extra virgin olive oil
Instructions

Preheat the oven to 400 degrees.

Slice the San Marzano tomatoes in half.

Scoop out the inside stuff and seeds from the tomatoes.

Place the tomato halves on a baking sheet.

Drizzle olive oil over the tomatoes.

Sprinkle salt and pepper over the tomatoes.

Place the baking sheet with the tomatoes in the preheated oven.

Bake for 30 minutes.

Remove the tomatoes from the oven.

Drizzle extra virgin olive oil over the tomatoes.

Allow the tomatoes to cool, then store them in the fridge until you’re ready to use them.
