Greek Green Bean Salad is Perfect for Potluck or Picnic
When it’s as hot as it is everywhere, everyone loves a cool, refreshing and nutritious vegetable salad. And when my Mediterranean garden is overflowing with fresh green beans, this Greek green bean salad is just about the best gift anyone could bring to a potluck, picnic or party. Packed with Vitamin C, lots of B vitamins and all sorts of healthy nutrition, green beans are another tasty way to eat the Mediterranean way every day!

Cut the small sweet Persian cucumber into small pieces. Cut the cherry tomatoes in half.
Cut the feta cheese into cubes.
Rinse the fresh green beans and trim the stems. Bring a pot of salted water to a boil and add the green beans. Cook for just a few minutes until they are tender but still crisp. Immediately transfer the green beans to a bowl of ice water to stop the cooking process and preserve their crunch.
In a small bowl, whisk together the juice of one lemon, 2 cloves of minced garlic, 1/4 cup of olive oil, and 1/2 teaspoon of Spanish paprika. Add salt and pepper to taste.
In a large bowl, combine the green beans, cucumber, classic Kalamata olives, and cherry tomatoes. Pour the dressing over the vegetables and toss to coat.
Add the fresh feta cheese over the top of the salad and lightly toss to coat.
Serve the Greek Green Bean Salad immediately and enjoy the layers of flavor and texture in every bite.
