Healthy Lentil Veggie Stew

It’s the answer to chilly weather meal prep. It’s the perfect meal prep option for nights when all you want is a comforting cozy meal with no work at all.

In a deep saucepan, heat up 1/4 cup of olive oil over medium heat.
Add diced carrots, celery, and onions. Season with salt and cover the pot with parchment paper. Sweat the veggies for about 10 minutes until soft.
Add minced garlic, red pepper flakes, sweet paprika, and oregano. Cook for a couple of minutes until fragrant.
Blend in the tomato paste and cook for another couple of minutes. Once it’s well incorporated, add the crushed tomatoes.
Add the lentils and enough broth or water to cover them. Bring to a gentle boil and then simmer for 35 minutes or until the lentils are cooked through and creamy.
Add spinach and cook until wilted.
Serve hot with a drizzle of extra virgin olive oil, a sprinkle of Parmesan cheese, and a tiny dice of chives for a bright finishing touch. Enjoy!
