Healthy Low-Carb Cauliflower Salad

Did you know that cauliflower has 93 % less carbs in calories than pasta? So one of the easiest ways to make any pasta salad healthier is simply swap out some of the pasta for cauliflower. There’s no doubt about it, the unexpected combination of flavors and textures in this healthy salad will solve your search for ways to reduce carbs and calories and in a way you’re going to absolutely love.

Ingredients

1 head of cauliflower, cut into florets
1 tsp smoky paprika
a pinch of chili pepper
2 tbsp garlic powder
2 tbsp extra virgin olive oil
1 cup walnuts, broken into pieces
1 lemon, juiced
2 garlic cloves, finely minced
1 tbsp freshly grated ginger
2 shallots, finely minced
2 tsp maple syrup
2 tsp spicy mustard
1 cup pasta
salt, to taste
olive oil, for cooking pasta
basil, for garnish
sun-dried tomatoes, diced
arugula or other herbie green, for garnish
creamy avocado bits, for garnish

Instructions

Preheat the oven to 450 degrees.

In a large bowl, toss the cauliflower florets with smoky paprika, chili pepper, garlic powder, and extra virgin olive oil.

Spread the seasoned cauliflower on a baking sheet, ensuring that the cut edges are flat. Roast in the oven for 10 minutes.

Meanwhile, prepare the walnuts by breaking them into pieces. Place them on a separate baking sheet and roast in the oven for 5 minutes.

In a jar, combine the lemon juice, minced garlic cloves, grated ginger, minced shallots, extra virgin olive oil, maple syrup, and spicy mustard. Shake well to mix the dressing.

After 10 minutes, toss the cauliflower to ensure even browning. Return it to the oven for another 10 minutes.

Cook the pasta in salted and oiled water until al dente. Drain and set aside.

Prepare some basil for garnish and dice the sun-dried tomatoes.

Once the cauliflower is crispy and browned, remove it from the oven.

In a large bowl, combine the cooked pasta, roasted cauliflower, sun-dried tomatoes, and dressing. Toss gently to coat everything.

Top the salad with basil and arugula or another herbie green. Mix lightly to combine.

Sprinkle each dish with roasted walnuts and creamy avocado bits.
