Hot & Healthy: Spinach, Tuna & Artichoke Dip
Are you ready to wow your guests with this twist on a hot cheesy artichoke dip? There’s a secret ingredient that makes it much healthier for everybody and you don’t have to tell a soul!

Preheat the oven to 375 degrees.
In a mixing bowl, combine the quartered artichoke hearts, spicy mustard, and kefir or thick yogurt. Lightly blend everything together.
Add the tuna to the mixture and break it into big chunks.
Stir in most of the grated parmesan cheese, reserving a bit for the topping. Add the sliced red onion and fold in the baby spinach leaves.
Transfer the mixture to an ovenproof bowl.
Sprinkle the top with the remaining grated parmesan cheese.
Place the bowl in the preheated oven and bake for about 20 minutes, or until the dip is nice and bubbly.
Remove from the oven and let it cool slightly before serving.
