Mediterranean Labneh, Goat Cheese Spread

It only takes a minute to learn how to make a super creamy fabulous Mediterranean goat cheese spread, Labneh. Wait 12 hours and it’s a creamy, dreamy spread. Wait 48 hours and you’ve just made homemade goat cheese! Or any amount of time in between. It’s just a matter of how long you are willing to leave the yogurt alone for this totally healthy treat!

Best of all, yogurt and other fermented foods add wonderful probiotics to your diet and make your microbiome very very healthy and happy.

All kinds of toppings work…whether you want it savory (like the sumac and EVOO one featured here) or sweet with honey and pistachios or anything else you fancy with cheese.

Ingredients

2 cups plain yogurt (goat is best)
1 tsp sea salt
1 tsp lemon juice
sumac
olive oil

Instructions

In a bowl, combine the plain yogurt, sea salt, and lemon juice. Stir well to incorporate all the ingredients.

Lay out two layers of cheesecloth on a clean surface.

Pour the yogurt mixture onto the cheesecloth.

Gather the edges of the cheesecloth and tie it tightly to form a bundle.

Hang the bundle over a bowl or sink to allow the liquid to drain. You can use a weight to help speed up the process.

Place the bundle in the refrigerator and let it drain for 12 to 48 hours, depending on how thick you want your labneh to be.

Once the desired consistency is reached, remove the labneh from the cheesecloth and transfer it to a serving dish.

Sprinkle some sumac over the labneh for added flavor.
