Papas Arrugadas, Spanish Wrinkled Potatoes
If you visit Spain’s Canary Islands, you’ll see platters of wrinkled potatoes, known as Papas Arrugadas, served with their equally famous salsas, known as mojos. This wrinkled potato recipe couldn’t be easier. You’ll just need a heavy hand with some Mediterranean sea salt or live close enough to fill a bucket with water from the sea!
Ingredients
1 lb baby potatoes
salt
Instructions

Place the baby potatoes in a single layer in a pot.

Sprinkle 1 tsp of salt over the potatoes.

Cover the potatoes with water.

Cook the potatoes covered for 15 minutes.

Start adding lots of salt to the water.

Stir and gently boil the potatoes until the water is pretty much gone.
