Patatas a la Riojana, Microwave in a Jar!
Patatas a la Riojana is a classic Spanish tapa but it usually takes a lot of time and effort. This Mediterranean Minute #short teaches you how to make it in a Mason jar in the microwave in just ten minutes. So easy and so tasty, you’ll make it all the time.
Ingredients
1 cup water
pinch of cumin seeds
1 tsp sea salt
1 bay leaf
5 sundried tomatoes
1/2 cup white wine
5 baby potatoes
10 cherry tomatoes
2 tsp smoky paprika
1 tbsp tomato paste
1 tbsp olive oil
1 chorizo sausage
Instructions

In a jar, combine water, cumin seeds, sea salt, bay leaf, sundried tomatoes, and white wine.

Add baby potatoes and cherry tomatoes to the jar.

Sprinkle smoky paprika and tomato paste over the ingredients.

Drizzle olive oil over the mixture.

Seal the jar tightly and shake it vigorously to mix the ingredients.

Loosen the lid slightly to allow steam to escape.

Microwave the jar on high for 10 minutes, or until the potatoes are tender.

Carefully remove the jar from the microwave and give it a gentle stir.

Plate the dish.
