Preserved Lemons, a Mediterranean Kitchen Staple
If you love lemons and Mediterranean cooking as much as I do, then your pantry just has to stock some preserved lemons. They are my go-to flavor booster when I’m short of time and looking for a really rich solution. I mince them up to add to rice dishes, stuff a whole chicken with them before tossing it in the oven, add them to stews and sauces. They add a little bit of lemon love to everything!

coarse salt

Cut some clean lemons into wedges.

Pack a clean jar with coarse salt and lemons.

Cure it in a fridge for 3-4 weeks.
