Roasted Padron Peppers Tapa

Wash and dry the Padron peppers thoroughly.
Drizzle the peppers with flavorful extra virgin olive oil, such as Picual, ensuring they are well coated.
Heat a sauté pan over high heat until it is very hot. Add all the peppers to the pan, spreading them out to allow for even cooking.
Cook the peppers, stirring occasionally, until the skin is charred and dark brown all around. This will take a few minutes.
Continuously move the peppers in the pan to prevent burning and to ensure they cook through. Once the peppers have wilted and softened, transfer them to a serving platter.
Sprinkle the peppers with crunchy Mediterranean sea salt, covering them evenly.
Serve the spicy Padron peppers to your guests but caution them about the occasional extremely spicy pepper.
