Simple Chicken Provencal
A tender, juicy, flavorful Mediterranean chicken dinner recipe can be the most satisfying thing to see on a dinner plate. It doesn’t have to be fancy or fussy, it just needs to be grilled to perfection and spiced just right. And this healthy Mediterranean-flavored dinner recipe delivers on all those things in less than 30 minutes.
Ingredients
2 lemons, zest and juice
1 tsp Herbes de Provence seasoning
1 tsp tarragon
¼ tsp fresh pepper
½ tsp sea salt
½ tsp sumac
½ tsp pomegranate powder (or more sumac)
1 Tbsp lemon zest
¼ cup extra virgin olive oil
¼ cup lemon juice
1 Tbsp honey
2 chicken breasts, sliced or pounded to 1/2″ even thickness
Olive oil for grilling
Instructions

Mix together all the marinade ingredients.

Slice or pound the chicken breasts into ½” even thickness.

Marinade the chicken with 4-6 Tbsps of the marinade for 5 minutes, reserving the rest for dressing. The chicken can marinade for longer if you want to wait until your rice is ready too.

Heat a stovetop griddle or grill to medium high, lightly coat with olive oil and grill the chicken 3 minutes on each side until cooked through but still tender.

Plate the chicken, steamed asparagus and rice, using the reserved marinade as a saucy finish to the dish.
