Spanish Almond Cookies
Get the holidays off to a healthy start with these gluten-free oil-free classic Spanish almond cookies. They are incredibly easy to make and just darn good-for-you tasty!

Preheat the oven to 360 degrees.
Separate the egg yolks from the whites. Beat the egg whites until they form stiff peaks.
Gently break the egg yolks and fold them into the beaten egg whites.
In a separate bowl, mix together the sugar, finely ground almonds, roughly chopped almonds, lemon zest, and a sprinkle of cinnamon.
Fold the almond mixture into the egg mixture, being careful not to overmix. The batter should be soft and moist, roughly holding together.
Using an ice cream scoop, scoop the batter onto a baking sheet, making evenly sized cookies.
Bake in the preheated oven for 15 minutes, or until the cookies are golden and fabulous.
Transfer the cookies to a rack to cool.
