Spanish Chorizo & Cider Tapa

Heat a saucepan over medium-high heat and pour a generous amount of extra virgin olive oil into it. The oil should be enough to help the sausage brown and become crispy.
Carefully add the sliced chorizo sausage to the hot saucepan, arranging them in a single layer. Allow them to cook undisturbed until they become crispy and brown on the bottom.
Flip the sausage pieces and toss them around the pan to ensure even cooking. Continue cooking until all the sausage pieces are evenly browned.
Pour 1-2 cups of sparkling cider into the saucepan, depending on how much sauce you want to serve with the chorizo. For a syrupy cider flavor, it is recommended to use 2 cups.
Add a sprig of fresh bay leaves or 3-4 dried bay leaves to the saucepan, stirring them with the sausage and cider until they are completely submerged.
After a minute or two, remove the sausage from the saucepan and set aside. Continue cooking the cider down until it thickens into a rich, syrupy consistency. You can determine the thickness by visually observing the sauce.
Divide the cooked chorizo into small serving dishes. Drizzle them with the flavorful cider syrup.
