Spanish Crema Catalana
Welcome back to my Spanish kitchen. Crema Catalana is a northern Spain specialty that’s been adopted all over Spain much like the French crème brulee. Crema Catalana comes together in less than 30 minutes with only a handful of pantry staples. The result is the creamiest dessert you’ll ever have!

In a small bowl, whisk together a little milk and cornstarch until smooth. Set aside.
In a medium-sized pan, pour the remaining milk and set it over medium heat. Add the cinnamon stick and lemon peel. Infuse the flavors for about 10 minutes.
Meanwhile, separate the egg yolks from the whites and save the whites for later use.
In a separate bowl, whisk together the egg yolks and sugar until well blended. The mixture should become light yellow and fluffy.
Gradually add the cornstarch mixture to the egg yolk mixture, whisking until well incorporated.
Strain the milk to remove the cinnamon stick and lemon peel. Let it cool for about 5 minutes.
Stir the milk and egg yolk mixture together before returning it to the pan. Strain the mixture again for a smooth and creamy texture.
Using a flame torch, eliminate any bubbles on the surface of the mixture.
Place the pan back over medium heat and stir continuously for about a minute until the mixture starts to bubble.
Remove from heat immediately.
Check the consistency and thickness of the mixture using a wooden spoon. It should have a thick, custard-like consistency.
Carefully ladle the mixture into six prepared custard cups.
Let the custard cups cool for about 10 minutes before covering them with plastic wrap.
Place the custard cups on a cookie sheet and refrigerate for at least four hours or overnight.
Just before serving, sprinkle a thin layer of sugar over the top of each custard cup.
Use a flame torch to caramelize the sugar, creating a crispy crust. Be cautious not to burn the sugar.
Repeat the caramelization process for a second layer of sugar, ensuring an even and crunchy crust.
