Spanish Fried Eggs & Chorizo
What better way to celebrate the new harvest than with an iconic classic of Spain fried eggs with chorizo. It couldn’t be simpler. It couldn’t be tastier. And according to George, it couldn’t be more addictive!
This insanely tasty Spanish way to fry eggs for dinner with some spicy chorizo, known in Spain as Huevos Fritos y Chorizo, takes only a few ingredients and a few minutes to whip up a protein-packed dinner for only a few dollars.

Heat a generous amount of olive oil in a pan over medium heat.
Add the garlic cloves to the oil and cook for 2-3 minutes, until the edges start to bubble, and the garlic becomes fragrant.
Remove the garlic and set it aside.
Crack the eggs into a bowl.
Increase the heat slightly and carefully slide the eggs into the hot oil.
Spoon some of the hot oil over the eggs while they cook.
Cook the eggs until the whites are crispy and puffed up, but the yolks remain soft in the center.
Remove the eggs from the pan and set them aside.
Return the garlic and chorizo sausage to the pan, along with a sprinkle of oregano.
Heat the chorizo until warmed through, but not fully cooked.
Plate the eggs and top them with the chorizo mixture.
Serve with fresh bread and sprinkle with a touch of salt.
